Fabu Restaurant & Catering – Authentic Caribbean & Haitian Flavors in East Stroudsburg, PA

Fabu is an absolute gem in East Stroudsburg! We tried the legumes, wings, goat curry, and oxtail. Every single dish was cooked to perfection with rich, authentic flavors that blew us away. Beyond the food, the hospitality made the experience unforgettable. The owners themselves took care of us, and their kindness and genuine warmth made us feel right at home. We will be back to try the red snapper. Without a doubt, a must try if you’re in the area.

First of all I am very happy to have great Haitian quality food in the Poconos. This is truly a gem and I hope this review reaches many so many can taste the quality of their food. Farah and Michael puts their all into their restaurant and it shows. My daughter and I loved the mango lemonade and everything else we ordered. Thank you and I will be back with the rest of my friends and family.

The owners were delightful. The customer service included sampling of delicious lemonades and a few menu items to ensure we would enjoy our entrees. We tried the black rice, plantain, beef legume, curry chicken, and jerk chicken and the mango and strawberry lemonade. All delicious! Our food was freshly prepared so we had a delightful chat re Caribbean culture, history, food. Can't wait to dine in again and attend future events.

Fabu is my favorite choice for Premium Caribbean cuisine in the Poconos area. The authentic flavors of each plate are more than satisfying. My favorite dish has to be the Oxtails but please do not miss out on their amazing Stew Chicken. All fresh and tasty to the best of standards.

Upon entering FABU, I was greeted with a warm smile and the sweet aroma of home. The owner Farrah offered much more than just delicious food. She offered genuine connection and true hospitality! Each dish was well seasoned, made to order, and bursting with flavor. As someone who recently relocated to the area, every bite reminded me of my own Caribbean family and made me feel right at home. FABU is more than a restaurant — it’s an experience filled with love, culture, and comfort.

We know good Haitian food when we taste it. We had the legume, black rice, fried plantain, rice and beans, white rice, oxtail and stewed chicken. All done to perfection down to the pikliz. The owners are very nice and super accommodating. Take it from us, you'll love the food, folks and atmosphere.

I came into the restaurant feeling very indecisive because everything on the menu looked so good! I ended up ordering the Caribbean Chicken, and it did not disappoint. The portion was generous, and every single item it came with was absolutely delicious. My children loved it so much that we came back the same day to order more! Also, the homemade lemonade Top tier, refreshing and full of flavor. Highly recommend! They did their thing, as being the only Haitian restaurant in the Poconos you guys nailed it!
